Jared Schmidt, Bar Manager

Joining Absinthe in April 2013, Bar Manager Jared Schmidt incorporates his signature style while preserving the great tradition Absinthe’s bar has up held for fifteen years. Most recently the bar manager at the nationally acclaimed Quince restaurant in San Francisco, Schmidt focuses on maintaining the original, well-crafted cocktail list at Absinthe, while continuing the seasonal ethos in the daily-changing chalkboard menu.

“I first heard about Absinthe’s impeccable bar program while in Sacramento just starting out in the industry. It’s been a fixture on the bar scene in Northern California and I’m thrilled to now be a part of the team,” says Schmidt. “I look forward to challenging myself daily to maintain the reputation of Absinthe’s bar, while incorporating my own techniques and ideas.”

Before moving to San Francisco five years ago, Schmidt gained experience in every restaurant position imaginable, both front- and back-of-house, but as soon as he stepped behind the bar his creativity peaked. Prior to Quince, he helped open La Mar Cebicheria, followed by working the bar at Cotogna, while concurrently working alongside Absinthe’s partners and bar vets Jeff Hollinger and Jonny Raglin at Comstock Saloon.

Schmidt enjoys reading cocktail books, and he counts his favorites as PDT, Savoy, and Absinthe’s own The Art of The Bar. In fact, he has owned over three copies in his lifetime, proving that this book is something Schmidt cannot live without. He spends his free time playing tennis, enjoying film, riding motorcycles, and brewing his own cider. He is also a member of the United States Bartending Guild.
