Justin Jensick, General Manager

Justin Jensick joined Absinthe in June of 2008. As General Manager, he partners with Fiona Mallon to ensure memorable guest experiences and support for Absinthe’s team, on and off the floor. Most recently serving as General Manager of Eastside West, Jensick brings more than 15 years of experience in the restaurant industry, holding multiple front-of-house positions including host, busser, server, bartender and manager.

His affinity for hospitality as well as for cocktails and vintage spirits first attracted him to the restaurant scene, so it was no surprise that he fell in love with Absinthe the first time he set foot inside. His favorite cocktails include two of Absinthe’s signatures – the Sacred Heart and Scarlett O’Hara, and his go-to dish on the menu is the Absinthe burger – which he touts as the best in town.

Jensick currently resides in San Francisco with his wife and new baby daughter.
