Eric Vreede has been involved in the food and wine business for the last twenty years. He served as the original co-general manager for Absinthe when it opened in 1998. Currently, as director of development and operations for Absinthe Brasserie & Bar, Absinthe Private Dining, Arlequin Wine Merchant and Arlequin Food-to-Go, Vreede works to maximize the opportunities of the interrelated businesses.

Vreede has received numerous awards and recognition for his work with wine. He also serves as the coordinator of the team that has organized the award-winning fine wine program at Absinthe and Arlequin Wine Merchant. He works closely with the executive chef to pair wines with the seasonal French and Italian foods found on the restaurant's menu.

In 2000 Vreede spent a year as general manager and partner at Café Monk. Before he worked for Absinthe he had served as general manger at The Heights Restaurant. He also worked as general manager and wine director at Sierra Mar at the Post Ranch Inn in Big Sur, overseeing a list of over 3,000 wines. He has served as a restaurant and wine consultant as well as serving as a judge at international wine events. He is well traveled, constantly exploring world wine regions looking to discover new treasures.

Eric attended the University of Michigan at Ann Arbor.
