Aaron Wasserman, Chief Sommelier

As Absinthe Brasserie & Bar’s lead sommelier, Aaron Wasserman works closely with Executive Chef Adam Keough and wine-director Ian Becker to fashion an ever-changing list of wines that complement and challenge the complexity of the restaurant’s menu. With more than a decade of restaurant experience, he expertly guides patrons through a memorable dining experience.

A Northern California native, Wasserman held several front- and back-of-house positions before exploring his interest in wine. Following two years as a server at a fondue restaurant in Saratoga, he enrolled in the California Culinary Academy to gain a fresh perspective on the restaurant industry. “Looking back, the most pivotal and influential class was my first wine-education course, with Master Sommelier David Glancy,” says Wasserman. “Glancy introduced me to the wonders of fermented grapes and the entire wine-making process, and, needless to say, I caught the wine bug.”

After receiving his culinary degree in April of 2006, Wasserman joined the Absinthe team as a server, and several months later became the Assistant Sommelier. “I knew Absinthe had a serious wine list and that Arlequin Wine Merchant featured a diverse selection, and I immediately wanted to be a part of their wine program,” says Wasserman. His drive to taste, explore, learn, and educate led to his promotion in the summer of 2007 to Head Sommelier.

At Absinthe, Wasserman likes to challenge guests to drink “outside the box.” “As a sommelier, it’s important to gain the trust of your guests in order to introduce them to something new.”

Wasserman lives in San Francisco and enjoys golfing, Bikram Yoga, and spearfishing in the Pacifica Bay.
